Slow Cooker Sweet Potato Chili

Just in time to usher in Fall! If you are allergic to tomatoes, skip this recipe (I am sorry!), if you're good with them then this is a great recipe for that cooler weather. I add a lot of veggies to our chili, if it were just me, I'd add twice as many as this but to please a whole house, I think this is the perfect amount. You can also adjust how much seasoning you want to add or if you want to add peppers, I absolutely do not like spicy foods so I omit the jalapeño all … [Read more...]

Easy Zucchini Pasta

When I went gluten free, I was completely depressed over the loss of pasta. I mean, seriously. I could eat pasta all day. ALL DAY. I'll also admit, I'm not a fan of the gluten free versions of pasta either so that just didn't do it for me. Because of the abundance of allergies and intolerances I'm dealing with, I have a pretty strict diet of chicken, fruit and veggies. That's it. Ok, so I do have the occasional allergy free cookie but other than that, I'm on a strict diet. My body is used to … [Read more...]

Dip Dip Hooray with Tyson & Heinz

This Labor Day, our family had a blast with Tyson Chicken Nuggets, Heinz Ketchup, Ore-Ida Fries & some great Hasbro games. Just because my son has food allergies doesn't mean he has to skip out on fun activities, it only means those activities have to be carefully thought out and made special just for him. I planned out our Labor Day of fun to include dairy & nut free Tyson Chicken Nuggets, Ore-Idea Crinkle Fries & Heinz ketchup. All of these are safe for my son (of course, … [Read more...]

Easy & Healthy Lunches for Mom from Lean Cuisine

As a working mom, I usually spend so much time planning lunch for my children that I forget my own and end up not eating or heading to the nearest drive thru. As a mom to a child with food allergies, what I eat is completely different from my children. Both of my boys are extremely picky which means we have very few options, however, I like to think outside the box a bit and enjoy something more than just chicken nuggets. Because of this, I thought we could take a look at a healthy … [Read more...]

A Review: GoPicnic Ready to Eat Meals

A few weeks ago, I ran into Target and stumbled upon GoPicnic's ready-to-eat meals and I was SO excited! Having food allergies typically means you have to prepare everything ahead of time. For us, this means I think about every meal and every snack every single day. It also means, if you are on the run and forget a meal then you are up a creek. Several times, I have found myself having to drive all the way back home to make my son something to eat then hit the road again. This product changes … [Read more...]
